When your teenage son finds the candied pecans in the cupboard and begs you to make a salad with them and says “you know mom the kind with the apples and cranberries.” You do it. That is how this whole situation came about. So I threw it together with what I had. I was out of Gorgonzola but I had feta, it was a happy coincidence and the perfect touch. It was a cool evening and the table inside was covered in papers so dining al fresco was a winning option. We really enjoyed it. Apple and Cranberry Salad
Ingredients:
- Torn romaine lettuce
- Cubed apple
- Dried cranberries
- Feta cheese
- Candied Pecans (I get mine at Trader Joe’s)
- Slivered red onion
- diced cucumber
- Honey balsamic vinaigrette (recipe to follow)
Toss all ingredients together and drizzle with dressing. Provide extra pecans, cranberries and feta for those who want just a little extra.
Honey Balsamic Vinaigrette
- 1/2 cup extra virgin olive oil..EVOO
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- salt to taste
Combine ingredients until blended. Honey is hard to dissolve so make sure it is at room temp. If you need to heat it you can do that by putting the jar in a pot of hot water.
I love this dressing and sometimes add orange zest like I did for this salad…HERE
It was a hit and my son loved it just as much as he remembered. That made my mama heart happy.
I love everything fall. Eating dinner al fresco is one of my favorites, along with savory comfort foods.
