A few weeks ago I made a trip to my favorite local farmers market called The Grove. I wrote about that a few days ago, A Trip To The Farmers Market. Living in the citrus growing region of Southern California I am used to some delicious oranges. I came home with the best oranges that I have had in years, along with perfect avocados. I also scored a huge head of organic romaine lettuce and a fresh bunch of dill. This was the perfect combo for my favorite Orange and Avocado Salad with a Balsamic Honey Citrus Vinaigrette.
Here’s what you will need:
- a head of romaine
- oranges
- avocados
- blue cheese
- red onion
- fresh dill (optional)
- cracked black pepper
The amounts of each will depend on how many you are feeding, how large your salads will be and personal preference. This picture gives you a pretty good idea of ingredient proportions. Love blue cheese like I do? Pile it on. Onions not so much, go sparingly.
Wash and tear your romaine first, then top it with your sliced avocado and peeled oranges. Next sprinkle with blue cheese crumbles and snipped dill. Place a few rings of red onion on top. Now you are ready for my favorite dressing.
Balsamic Honey Citrus Vinaigrette:
- 1/2 cup extra virgin olive oil..EVOO
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1 tbsp orange zest
Combine all ingredients in a carafe and shake or stir till blended. It helps if the honey is warm. I like to do this by placing the jar in hot water.
After you have drizzled your salad with the dressing, top it with cracked pepper and enjoy!!!
